I wouldn’t want to bubba a grooved trigger by trying to ease the edges. Can a smooth faced trigger be easily installed? Are K frame triggers generally interchangeable?

If you transfer the sear from the existing trigger to the new trigger, you will have a better chance that it would require no fitting.

The sear is on the hammer. When trading hammers, that is sometimes beneficial, but often not required. Trading triggers may or may not require fitting, depending on the parts it interacts with.

Looks like I need a .265" wide trigger, most smooth ones are .310 or wider.

I swapped out a trigger on a 6 inch 19-3 a couple years ago. I swapped out the hand----putting the hand of the original trigger onto the "new" target trigger I wanted to install. That's the only thing I needed to do and no fitting was required at all. Worked out perfectly.

.300 smooth is probably what it came with, not always but triggers usually drop in from what I’ve seen switching mine around in my K frames. Use your original hand like stated above
