Advice from an old Texas BQ'er was to check your brisket every 30 minutes
and have a beer, do this for 12 hours or however long you could last.
I liked it when they started sliding rear windows in pickup trucks. You
could polish one off then throw the empties in the truck bed so as not
to litter. That worked until about 65 mph when Al. cans would fly out.
 
No problem on that Brisket.

When you wake up, just give it a "Spritz"
and you are good to go.

65 mph!

We did all our drinking running around town looking at cute girls.
The buddy system makes it safer, since the driver does not have to bend over to the cooler and take his eyes off the road and things. :D

My brother used to call empty cans in the truck bed "corner detectors"

Where is the timer for the Scotch drinkers in Lounge? hmmmm....I feel that we are under represented.....

1 finger - rare

3 fingers - well done (inedible)

I'll admit to using a wood pellet grill for Texas style brisket. I have a monster home-built offset smoker that weighs 800 pounds but smoking a brisket in it requires way more fermented malt beverage than I can (or want to) consume anymore.

The "monster" gets used but only when there's lots of company to help tend and no early wake-up call the next day - or for things other than brisket. It takes the same amount of time as the pellet smoker but with pellets I can go to church, take a nap, watch a Cardinal game, or a myriad of other things while it sallies forth without my constant supervision.
