Beef Barley

I’ve been wanting to make some for a while.
We are a little thin in the pantry so I used a quart of veg. stock and a can of beef consume with a can of water.

To that I added some ribeye bones and pieces and put it to simmer. Sauted some carrots and onion then some diced up sirloin.
Meanwhile I cooked the barley per directions.
Strained the stock and threw it all together with a couple of bay leaves on a slow simmer for a while.
Viola! Kick butt beef barley soup
I forgot to say that I added a little frozen corn too
And of course salt and pepper to taste

When I was a lad, mom would often have to stretch a £. She would put mashed potatoes in a bowl and shape it like a volcano. She would pour her beef barley soup around the island and into the crater. It was delicious, filling and fun to eat. Mom encouraged playing with your food if it got you to eat it.

Good memory.
 
In my home, as a kid, Dad was the soup/stew, spaghetti sauce, and chili cook.
Mom did everything else

Beef & barley, ham hock & bean, navy bean, you name it!

I have his recipes, but it wasn't about the ingredients...
Dad had a way of cooking it, that I haven't been able to duplicate.

I keep trying though!
 
That probably comes with age and interest in the mission.
 
Today was a good soup day ! I made a batch of cabbage rice soup in the crockpot .
Todays batch was made with hamburger browned with onion and celery then put in the crockpot and added carrots and a can of stewed tomatoes two boxes of beef stock and a couple of bouillon cubes ,pepper and Italian spices and a head of cabbage diced.
I added some brown rice in the last 45 minutes , Also made grilled cheese with a slice of ham as a side.:D
 
Just yesterday, I boiled the cap off of New Year's prime rib in canned beef broth with onions, celery, carrots, and dried mushrooms. Stripped meat off the bone, added barley and seasonings.

Throw in a loaf of U-Bake-It sourdough split, buttered with garlic powder and parmesan and we have dinner. Tomorrow same with cheese biscuits!
 
I like to make Green Bean Soup. Wife makes excellent Chicken Soup and Potato Soup.
I will be making this in the next week.:)


TUSCANY POTATO SOUP​
1 lb. Bob Evans Mild Italian Roll Sausage
1 lb. Bob Evans Hot or Spicy Italian Roll Sausage
2 tablespoons of Olive Oil
1 chopped medium onion
Salt to taste
¼ tsp. pepper
¼ tsp. red pepper flakes
1 tablespoon chopped parsley
1 48 oz. container of chicken broth (sodium free)
1 6 oz. pkg. of precooked chicken strips cut into pieces
2 cups diced red potatoes
1 bunch of fresh & washed spinach chopped into pieces

In soup pot, add olive oil and crumble and brown sausage over medium high heat. Add onion and saute’ for 3 to 4 minutes longer.
Add salt, red, black pepper, broth, chicken strips, potatoes, parsley, and spinach.
Bring to boil and immediately turn heat down to simmer. Simmer for 10 minutes longer and add spinach.
Cover and simmer for an additional 10 minutes.
 
Will need to do clam chowder and potato soup when I get back (Going to Socal for a week). Of course, some dried beans on the horizon with tortilla soup and black bean soup.
 
I would love to see a recipe for that Green Bean Soup if possible.The volcano meal sounds like a course for undergrad geology students.Maybe I can make up some of the Beef Barley soup next week!!!
 
My young wife made a few mistakes learning to cook, a couple of her majors were trying to bake whole wheat bread with brewer's yeast...this yielded bricks suitable for paving, however as a young husband I found that sliced real thin and toasted it was palatable.
One of the others regards barely beef soup...she started off with some stew meat and onions, carrots, about everything to make it right...then added the barley, which to her eye did not look sufficient so she added some more, and some more until she thought it looked right. When the barley started swelling she had to transfer to a bigger pot and in the end it was what would best be described as "gruel" or something you would feed somebody in order to fill them up with the least amount of taste. In retrospect the bread was at least edible.
In a hurry once she planned on hamburger helper for my three year old son and I, found that she had no hamburger and substituted hot dogs, thinking hot dog helper...that would be good. Well sir...the hot dogs do not absorb the soup and hot dog pasta soup is never on the menu...he was delighted with his happy meal and a Big Mac never tasted better.
