CABBAGE SOUP

Peel some taters and boil in a big pot. Before they're completely done drop in some polish sausage and finish cook the taters. Coarse slice cabbage and lay on top of the taters and sausage and let steam until done. Serve taters with butter and sour cream, salt and pepper. Mustard for the sausage and salt and pepper for the cabbage. Cook lots of taters and sausage and slice up and fry for breakfast with eggs. Now that is good eating!

too funny, I also made a cabbage based soup yesterday!
Sausage
carrots
onions
white navy beans
1 head of cabbage

I like to sweat down the cabbage in the seasonings before putting it in to simmer.

a lot of great suggested meals. was going to purchase a brisket before i posted the thread. but that will be in the slo cooker w/ potatoes/ carrots. open to any suggested add ins. the malt vinegar sounds like a good add in. i make stuffed cabbage w/ red sauce like my mom made. thick enough to put on mashed potatoes. suggestion, core cabbage, fill core w/ water, wrap, freeze overnight. thaw. cabbage seems to taste better than when the cabbage is steamed for stuff cabbage.

Corned beef...

Several mentions of one of my favorites, corned beef. No wrong way to do it but if you want a treat try this...

Use a pressure cooker and you will be eating in an hour instead of 3. Marinate the CXB in apple juice for a couple of hours to overnight and then discard the juice. This cuts a lot of the saltiness. Use fresh apple juice for your cooking liquid {one cup for every 15 minutes of cooking time - a 3/4# CB will take an hour in the pressure cooker = 4 cups of juice}. Before you close the lid drizzle a couple of tablespoons of Molasses over the beef... trust me on this one, the effect is amazing imparting just a subtle hint of sweetness.

Pressure cook at 15 psi {the standard setting on most PC's} and in 55 minutes {mas y menos} you will have the most tender, moist, flavorful Corned Beef you ever tasted. Cook your vege's in a separate pan to avoid overcooking and yes, by all means include a cabbage.
