Chicken n Dumplins

Just come to Asheville and get your Chicken and Dumplings at the Moose Cafe. While you're here visit the Biltmore Estate and the Blue Ridge Parkway. The Moose Cafe is at the Farmer's Market and they get their vegetables fresh daily there. While you're here try some Barbeque.

If you dont mind me asking but, how far are you from Hendersonville? I think it is? I have a friend lives somewhat nearby.
 
Dad lives on the north edge of Hendersonville. It is about 26 miles to Dad's from my place.


Hope he's doing very well? Reason I asked is because im hoping to make a trip up that way later in the year and also--the Hero of Pork Chop Hill (Joesph G. Clemmons Jr)--lives there. He just turned 85 in April and has extended his hand for me and a friend to visit.

Oh and, im glad to announce that we have one of those Honey Baked Ham--shops here in town like they have there in Hendersonville.
 
Thanks to everybody! Mary and I decided to drive to CB for supper.
We got a fairly large serving of chicken and dumplings plus 3 sides and cornbread muffins for $8.79 each. Everything was delicious except the fried okra is slightly better at Dickeys BBQ.
I'm glad the place was really busy 'cause I kinda made a pig of myself.

I use a recipe that my poor ol' gray haired momma from west Texas taught me. I cook my chicken in a chicken based broth until it's tender, pull it out and pick it off the bones.
Then I put it back in the broth. I take a tin of cheap biscuits and roll each one out thin and slice them into strips.
After the chicken broth and chicken are in a light boil, I layer the strips on to the top and cover it. Do Not uncover it for at least 10 minutes.
I had her home made dumplings for years and I swear that the biscuit recipe closely matched the scratch made dumplings that she used to make.
Lord I miss my mom.:)
