Chili Colorado con Carne

I haven't posted in a while, but I have been cooking.

Yesterday I made up two quarts of Chili Colorado Sauce, using a mix of Guajillo and New Mexico Chiles. Came out great.

Today I used one quart of that sauce and made Chili Colorado con Carne. An excellent batch, if I do say so myself. See attached image of the result.

Who else loves and/or makes this?

Nice beer you have there! Some say the beer makes the chili.
 
Think, chili without beans.

Never heard of it. Looks good. How do you make it?

Basically, its chunks of meat stewed in a chili sauce. This form is common along the US - Mexico border. For chili con carne purists, beans are a side dish.

This is my favorite form of chili con carne, ever since I first tried it in New Mexico.

I never put beans in my chili but mine is a whole nuther thing.

I was asking how you make the two quarts of Co. Chili Sauce.

I make it too. About the most tender beef one can taste when it's ready. YUM!
