Ringo,
That brown sugar will definitely give a different bit of flavor to the mix. Might be good! Let us know what you think about it. I generally like brown sugar for the most part.

And you are right, Pilgrim. It's hard to find real sorghum syrup these days. It's mostly amber colored corn syrup ... sweet but with little taste. My wife was born in SE Missouri and we used to go there for family reunions. We could always find some good sorghum syrup there and we'd stock up as much as we thought we could keep till it solidified. Came in the round cans with a lid like a paint can. My boys grew up eatin' the stuff (on cornbread, of course!) and both of 'em mention wishing they could find some good sorghum syrup somewhere. That stuff pictured above would definitely get me to try it!!

I don't know if anybody sells real Sorghum in the big stores.
If anybody knows of any, please let us know!
The last I had some, I ordered it from an online seller in Tenn.

I MAY be able to get some at the next gun show--in about 3 weeks. Why not? they sell everything else that's legal to sell.

ringo, whip up a batch for yourself tonite.
it takes no time n will let you alter it for the ladies.
i'm not sure brown sugar will work. i often prefer it but i suspect white is
better in this.

I didnt get a chance to taste it but, delivered to the ladies this morning. Ill find out tomorrow for sure. :)

I got another request for Thurs--my banana nut muffins.

Forgot, I poured about 1/4th cup of that maple syrup, and added 1/2 cup of Brown sugr. I hope that wasnt too sweet?

I picked up some white as well, but not knowing what the brown sugar would do? was why I added that maple syrup. I also used yellow cornmeal. I guess if thats not enough? I guess I could always dust the top with powdered sugar?

Sorghum Syrup is made by cooking the juice from the stalk of the sweet Sorghum plant. Sometimes Sorghum Syrup is called "sorghum molasses." This is confusing, because molasses is made from sugar cane and is a bi-product when granulated white sugar is taken out.

You can order sorghum from Muddy Pond.. they make a good product.

waiting on a "range report" on all these cornbread recipes...
mine and others... I unfortunately cannot have any at this time... something called colon/rectal cancer... almost done with that and looking forward to getting back on a normal diet... so I can have corn again along with other things that have fiber, seeds and skins... I really miss real food...

so let us all know how they went...

Pilgrim,

I can tell ya that we make it where I live in West Texas!! Of course, being recently transplanted from Eastern New Mexico, we brought it with us. But I also see it in various restaurants here. Ate at a kind of new sure enough barbeque place near here a couple of times in the last month, and one of their sides are cornbread muffins built with roasted green chile, a bit of corn, and a bit of crunchy bacon in the mix. When the muffin pans come out of the smoker (where they cook the stuff!), they put a generous topping of shredded cheddar on top of each muffin. I'm tellin' ya that I could make a meal on just the cornbread!!!! It is absolutely to die for as far as I am concerned. Gotta see if they might accidentally share their recipe.

But then again, cornbread ain't rocket science. All I gotta do is experiement a little here at home. What I may do is go back for another round or two of their good stuff (the Que is really great as well!), and try to pay more attention to what I see and taste in the muffins. So far, I haven't done any real looking ... just stuffing them in my mouth and down the hatch! (Hmmmm ... Hatch green chile ... is that a pun I just made?)

The bacon wouldnt last long enough in my place to be able to use it in cornbread.:D
