Cucumbers, onions and vinegar

Went through the kitchen in the prison one day. The inmate cook was standing over a pot, that looked like a 55 gallon drum, of the stuff pouring a 50 pound bag of sugar in the mix. I told the Kitchen Supervisor I gained 10 pounds just walking by. He chuckled and said that's the way they want it, that's the way they get it.
As much as I like it I never did get up the courage to try theirs.

Basic and delicious:

3 - 4 cukes, peeled and sliced
1/2 - 1 sweet onion, sliced thin
1/2 water, 1/2 white vinegar, enough to cover
Sprinkling of dill

Ready to eat in 2 hours, no refrigeration needed.
 
Just ate some I made last night, GREAT. I put a few Jalapeno slices and a few dashes of hot sauce in too.
 
Growing up my grandmother made cucumbers and onions in sour creme, a healthy dose of fresh ground black pepper garnished the top. Great summertime dish, always served cold right from the fridge, there were never any leftovers.
