I cannot digest lettuce or spinach so my salad dishes that I like are limited. I was pretty much eating cottage cheese with a little salad dressing(it helps) but that was getting very old.
I have buying some macaroni and potato salad as substitutes and one day I had a little of both left. I also had some pork and beans left so I thought what the heck, if it's not good I will pitch it.
I put some cottage cheese in my bowl, added a little three cheese dressing, added about the same amount each of potato salad, macaroni salad and pork and beans. Stirred it up good and I have found my salad. The only thing missing is some chopped up sweet onion which I will get my next trip out.
I have been through about three batches of it and am enjoying it. Because of the beans, followup couple of those little greenie weenie gas pills don't hurt.

Hey, if you like it and it works for you, go for it.

I've been made fun of for liking tofu, but I keep eating it. Made a tofu scramble for breakfast the other day. Good stuff.

As for salads, have you tried a Greek salad? When I make them I don't use salad greens. Basically I just cut up some tomatoes, cucumbers, red onions, green peppers, add in some feta cheese and olives (I like whole, pitted kalamata olives, but sliced black olives work, too), and toss with some olive oil and vinegar dressing (you could also use a Greek salad dressing, or maybe some tzatziki sauce). It's also pretty low in carbs if that's a concern.

Just a thought.

It sounds a bit like a Nick Taho's Garbage Plate (Rochester NY). I would probably like it, too.

Have you tried other greens, especially kale? Or is anything green and leafy a no-go?
 
Life in this world is filled with necessary adjustments of every kind it seems, some of which turn out better than we would ever have thought. I was diagnosed with food allergies a few years ago and have had to make some adjustments as well. One of the things I was sensitive to, believe it or not, was lettuce. Somehow awhile back I came up with the idea of using chopped green onion as a substitute salad base. I then added sliced radishes, carrots, and cherry tomatoes(quite a few of each), and a large can of albacore tuna, and finally some Ken's Country French dressing. Then mixed it up well. Turned out really well, and has become something of a staple for me. Here's to a little experimentation, my friend!

Here's another idea for a nice non-lettuce summer salad:

Small tomato wedges...avocado chunks...chopped onion...with sweet poppyseed dressing...one of my favorites... :)

Oooh...that sounds good. Sometimes I'll just have a bowl of cut-up tomatoes with a little salt as a snack or side.
