Not long ago my wife and I were having breakfast at the Copper Queen Hotel in Bisbee, Arizona, and I ordered the delightful eggs benedict from the menu. As I had my camera with me (naturally), I thought I'd snap a pic before I devoured this treat. I think that properly-prepared eggs benedict would probably rank as my favorite breakfast. What's yours?

It isn't breakfast unless it's biscuits and gravy. :D

Man, you got that right! My oldest son came home recently, and that's what he wanted for breakfast...biscuits and sausage gravy. He lives and works in D.C., and he says you can't get normal food there...no Tex-Mex, no chicken fried steak, and if you ask for gravy, you get this brown runny stuff.

I had one of the best versions of Eggs Benedict a few years ago on Whidbey Island. Instead of an english muffin as a base they used crab cakes. That was seriously good food. The last time I went back they had discontinued the offering due to lack of interest. :(

Waffle House Cheese and Onion Omelet Plate w/bacon and a waffle on the side.
Eggs Benedict very good too(not at WH).

To mkk41: The Quaker instant grits are adequate. However, if you have a Kroger store near you, try the Kroger brand "Instant Country Grits". They come in individual serving packs just like the Quaker, but I guarantee you they taste way better - nearly the same as genuine slow cooked grits. As for the favorite breakfasts pictured by other posters above, my arteries are still choking from just looking at the photos.

Which brings to mind the question.....when is a bisquit a "cathead" and why?

Well, that brings up a very important point.

A "cathead" biscuit is just that...a biscuit about the size of a cat's head which I figure has to be in the 2 1/2" to 3" or larger diameter variety. "Biscuits" or I should say the breakfast quick breads that resemble a biscuit typically eaten by natives above the Mason-Dixon line are much, much smaller. I've thought they've used a doughnut hole cutter as a biscuit cutter. ;) This is not always the case, but seems to be the norm in the northeast where I've traveled.

Also, to make good gravy it is a must to start with good sausage. The best sausage contains no MSG- which is very, very hard to find! Since I took those pictures, I've started making my own- which my family and friends contend is much better. ;)

I lived in mainland China and Hong Kong for about 5 years ...... and the ONLY thing I wanted to eat when I was stateside was good 'ole biscuits and gravy ....

Sometimes, there is just no substitute.

fav. breakfast

being from the boston area, it's an irish breakfast; black and white puddind [blood sausage]. rashers [thick bacon], bangers [small sausage]. batchelors beans, ham, eggs any style and toast with plenty of butter.
second, it would be fried chicken and waffles [plenty of vermont maple syrup] with biscuits and gravy.
no; i am not fat; 34 waist, 6" tall

Been seeing that "chicken and waffles" thing advertised by IHOP. Figured it must be a northern thing. Never have put those two together . . .

While I do love the home made stuff , I'm a single Yankee who loves Southern eats , but hates to clean up. I don't drink milk or eat eggs , so I don't buy them. Instant biscuits are as good as it gets for now.

The local butcher shoppe's fresh ground country sausage I buy is so lean , ya could cook a whole pound and barely get a shot glass of drippin's , so canned or jarred gravy it is.

Creamed chipped beef (SOS) on hash browns or home fries (instead of toast) is another favorite.

it is southern but due to the recession comfort food is big up north [no more $40 steaks and $12 martinis]. barbecue is in vogue, but only a few places can get it right.

Biscuits & sausage gravy, 1/2 lb of bacon, and 2 eggs sunny side up, fried in the bacon grease. (shhhh. Don't tell my cardiologist)

I like breakfast. Two eggs basted, a large pancake and bacon.
Biscuits and gravy and a side of bacon.
Two eggs basted, crispy hashbrowns and bacon.
I love eggs Benedict, and my local joint has great Hollandaise, but they use ham instead of Canadian bacon, so I usually just have them instead with bacon.

2 eggs flipped with good sausage and hash browns. Cover the eggs with green Tabasco and I'm happy. Wash it down with Ruby Red Grapefruit juice.

Please quit talking about some awful product known as "quick grits" They are why some people don't like grits. PLEASE use only stone ground REGULAR grits, either white or yellow, it makes no difference. Don't use water! Cook them in chicken broth with several sticks of REAL butter and add some heavy cream at the end. Add a little artesian well water with lots of hard minerals if you can find some. THEN, you will have true southern grits. I have converted many a yankee's taste for grits with these.

The best meat to go with them, in my humble opinion, is quartered squirrels, parboiled and pan fried in a cast iron skillet. Good very salty country cured ham is a good substitute.

GOOD EATIN !

My gal's mom back in Tennessee would put some shredded cheese in her grits.

We go out to Lancaster county and buy good Amish dried beef and come home and make homemade creamed chipped beef on toast. Doesn't get much better than that.

2nd place is eggs over easy, ham, rye toast.

and lots of coffee of course.

Biscuits and gravy, with tabasco, pepper and jelly on them[try it]!Years ago i saw a guy in a cafe in southern Missouri eat them this way[i asked the waitress if he had mental problems]!Milk and coffee with cream & sugar.Um,um good!
