Well, there is a vast knowledge base here for just about everything AND I know you guys like to eat! :D

How do you prepare fish fillets for frying?

How about a hushpuppy recipe?

I wish I had my wife's Granny's recipes. All I know is that we cleaned the catfish or trout, depending on where we fished that day, handed them in the back door, and 45 minutes later, we had supper. :D
 
I like this one:

HUSH PUPPIES

1 CUP YELLOW CORNMEAL

1 CUP FLOUR

2 TSP BAKING POWDER

1 TSP SALT

½ TSP BLACK PEPPER

½ CUP CHOPPED WHITE OR YELLOW ONION

6 GREEN ONIONS - CHOPPED

1 EGG, BEATEN

¾ CUP BUTTERMILK


MIX DRY INGREDIENTS WELL AND ADD EGG AND MILK
MIX UNTIL WELL BLENDED

SHAPE INTO WALNUT SIZE BALLS AND DROP INTO DEEP FAT
HEATED TO 375 DEGREES. COOK UNTIL MEDIUM BROWN.

DRAIN ON PAPER TOWEL - SERVE HOT WITH HONEY AND BUTTER
 
My Mother would filet crappie and dredge them in, I think, around 1/3 flour and 2/3 corn meal. Boy, do I miss those meals. She never wrote her hush puppy recipe down, and she can't remember it now. Mom was as good with a cane pole and a minnow as anybody, and she could back a boat down a ramp better than anybody I ever saw.
 
I filet all fish, big or small. One of my favorites, besides a beer batter recipe, is to dredge the filets in Shore Lunch. I love it! It's not easy to find though. I used to get it at the nearby Bass Pro Shop, until the great flood put the place under water.

Medium, Fine, and Extra Fine??? Which should I use?

I'm thinking "Fine".
 
Here's a hush puppy that you might like.

2 cups yellow corn meal
1 cup plain flour
1 cup buttermilk
2 eggs
3/4 cup precooked yellow corn. Use fresh corn and don't overcook. I put the corn with husks and silks onto a paper towel into the microwave and cook. About 2 minutes for one ear. 3 to 4 minutes for two ears. Scape corn off the cob. Be careful, those husks get mighty hot.
1 teaspoon baking powder
2/3 teaspoon baking soda
3/4 teaspoon seasoned salt such as Lowerys (any seasoned salt will do)
1/2 teaspoon fresh ground pepper
2 table spoons of white sugar
1/8 cup bacon grease. In my opinion, this is the most important ingredient.

Mix all of the dry ingredients in a bowl. Add eggs, oil, buttermilk and corn. Stir. Heat up the deep fryer. Make into balls about the size of a walnut and drop them into the oil. Cook till they are golden brown.

+1 for martha white. i live in MS and i've eaten more than my fair share of hush puppies, homemade and abroad. and while a few times i've had better it's hard to beat ms. white.
 
yellow corn meal, lawry's seasoned salt, everglades seasoning, black pepper, garlic powder or salt, put it in a gallon ziplock and then toss your filets in. I'm normally cooking crappie aka specs.

Get your oil hot, just short of scorching to where a small drop of water will super sizzle and you're ready. I generally use a dedicated deep fryer with peanut oil but I can getr done on anything hot.
