"healthy" breakfast I have not enjoyed in 30 plus years.

Corned beef hash was a camping go to scouting breakfast. Cooked in the old mess kit that was held together with a bolt you used to attach the pan handle.

Everything needed was wrapped in the bread bag. 2 days' worth was 4 eggs in the chopped off quarter of a carton, 4 pieces of bread then 2 cans of CBH to finish it off. Tie off the bag and in the pack it went.

Create a nice bed of coals, toss in hash and brown to your liking, two eggs on top cover until eggs are cooked to your liking. I liked my eggs with a runny yolk. Meanwhile toast is browning.

I might have to get some and make it up.

Rusty - Love the thought of the cabbage. Fortunately I can survive it but my underwear can't!
 
For me, everything in moderation. I work out 3 times a week. On those days and the weekend I will eat eggs, 2-3. I gave up fake butter over a year ago and my last cholesterol was 40 points below old man levels. I use olive oil and butter to cook the eggs. I am not 100% convinced that everything they tell us is good for us is really good for us. I am also not convinced that everything they say is bad for us is really bad.

Like I said, everything in moderation.
 
Since turning 65 a few years ago I resolved to start smoking unfiltered Camels, drinking cheap rye whiskey, and eating whatever I want. Just a patriot helping save Social Security - you're welcome.

If I only ate healthy stuff I'd be living on bean sprouts and alfalfa.

I'm supposed to be on a low fat, low sugar, low carbohydrate, low sodium and low taste diet. Every once in a while I just have to have a breakout breakfast at the local fire company.

I love my SPAM and love my corned beef hash, but I'd give them both away for a few slices of fried livermush. Kind of a midwestern NC thing. Two slices of livermush slathered with grape jelly on bread!
I've found frozen scrapple in Publix. If they don't have it it should be on their list they can order from. It's not as good as liver mush or liver pudding (those two are about the same thing) but it does have a flavor profile and texture thats at least in the ballpark. I'll pass on the grape jelly. I will take grits and eggs with mine.

My last was some of the SC rice based version (low country) I picked up on my way back from a wedding in Va. It different but also very good.

As for the CBH I do like the home made version but there's something about crispy fried Armour CBH that is extra tasty.
 
In the store a few weeks ago and on a whim bought a can of corn beef hash (with the little chopped potatoes) Well, this morning I fried that sucker up until crisp and greasy, pushed it off to the side and cracked an egg in the skillet. Mixed it all up, doused it with tabasco and ATE THE WHOLE THING :eek: Got my dose of fat and sodium for the next week but DAMN it was good!!!!! Finished off with 4 donut holes for dessert!

What! No bag a beignets to pack off to the office?
 
Locally we have a couple of Diner Car restaurants, I believe there are three in total, two are called Frank's and one could assume the same ownership. Noone over the age of 60 should be eating just about anything there, it is all fried one the griddle or in the deep fat. My wife and I go there maybe once a month, more in the warmer months because my wife has a thing for their hand dipped chocolate malt. They have an Elk burger that is out of this world and I usually get that but ever now and then I have to eat breakfast for dinner because their corned beef is home grown and terrific. I had their corned beef hash and eggs with a side of hashbrowns smothered in fried onions and gravy, scrambled eggs and yes....I added Tabasco to the whole mess. Their biscuits are baked in the oven then layed out on the griddle with a generous gob of butter. Oh man, it was great...
Breakfast is my favorite meal, I think....
 
When I was a young Trooper at the post, we had a couple of "really old" guys that would stop in around shift change to visit and I would give them a hard time about being drains on our retirement system.
Now I realize that I am one of those "really old" guys, and I am the drain on our retirement system. In not too many years, I will have been retired longer than I worked in the system.
I guess I have decided to just enjoy myself until my time has come to be removed from the system.

I've never really thought about it but on 1 November 2026, I will have been retired from the state system 25 years. I had in 25 years and 2 weeks service.

Local BBQ place also serves breakfast. Home made corn beef hash. Two eggs over easy, big serving hash, wheat toast with honey. Wash it down with coffee stronger than yesterday’s used transmission fluid.

Oatmeal, not the instant ****, with a banana and skim milk, or an omelet with whole grain toast and Smart Balance.
Yeah, I’m boring. :rolleyes:

When traveling, all bets are off. :)
