Hot Sauce

How do you cook sheepheads?? Here in N.Y they are tossed on the bank for the sky rats. (Seagulls) I'm willing to try them if they're good.

Scale them,fillet them and if they're big,cut them into 3 inch strips.Salt and pepper to taste, coat with corn meal and fry to a golden brown.I like mine a little crisp. Delicious.
 
Are you knutz?????? Sheephead is a wonderful fish. True they have a lot of bones and are a pain to clean, but the white flesh is second to none down here. I rank them with Specks and Flounder.

I just checked online and what we call "sheephead" here is really freshwater Drum. Is this the same fish????
 
I just sampled my first bottle of Crystal. I love the flavor of cayenne and as a result I like the taste of Crystal. Not quite as hot as I like but still very good.
I got my taste for spicy food in Thailand so I like it really hot. Thinking back I imagine I might have to re-acclimate to food that blistering.
 
Tobasco and Crystal. Very good. If I want real heat, I make my own green and red salsa, not sauce. How hot do you want it. I make a green that will remove the enamel from your teeth and still taste good.:)
 
I like the Cajun Chef Hot Sauce. I like the flavor and the heat does not overwhelm me like Tabasco. There are several web sits that sell this stuff and Welcome to Cajun One Stop Retail Store : Cajun Wholesale is one that has prices that are not a lot over local retail. Some sites sell a 12 oz bottle of the Cajun Chef for almost $4 when I can get it locally for $1.29. I like the Cajun Chef Spicy Green Beans too.
 
I got hooked on Thai hot sauce when I was there on R&R from RVN....Went to see if the women were as good as I was told.....They were.

I get the Huy Fong Foods "Sriracha Hot Chili Sauce" Buy it at HEB (a Texas Chain) I like it with any "white meat" I still stay with the old favorite "Tabasco
 
when i live on the left coast i'd fish sheepshead in the pacific they feed on crab and lobster (no claws) and other shell fish and had the taste of what they eat . i like franks with chili and lime . find it at your local super market.

Sheephead have black strioes but if you look in their mouth, their upper palate has boney plates that lets them crush crabs and barnacles. They are also Saltwater. Freshwater drum are not in the same league.

I can remember watching a sheephead come up to my baited fiddler crab and never feeling a twitch on the line and having the crab just disappear and the fish swim off.

They are good to eat!

We eat drum out of the upper Missouri. I would call it good but not great.

I like Tapatio sauce in a red and Tabasco Green for a jalapeno sauce. I find Chalula a little too vinegary for my taste.
 
Pacific sheepshead (the ones with the white chin and buck teeth?) are a member of the wrasse family. I was told the way to cook them is to boil the meat and use it just like crab meat. I did my first one by frying and it was too rich==resembles abalone. While filleting it, the meat gave off an oil that looked and smelled just like butter.
