It's simply the best easy way to cook grilled chicken to perfection.
Place charcoal or wood on both sides of the grill leaving the center open...place whole chickens or cut up parts in the center where there are no coals and place the cover on the grill with the draft across your chicken.... 1 to 2 hours depending on the size of your chicken....no flipping, no watching...simply enjoy your beverage of choice while it cooks...

Haha. I only cook chicken on my Weber charcoal grill using the indirect method just like you described. Best ever. I cook almost everything that way. Brussel sprouts, sweet taters, kabobs, you name it. Thanks, now I'm hungry.
 
Awesome, been doing it this way for years - and Turkey too!

I’m now cooking on a Traeger so everything is “indirect” and I’m loving it. Still have the Weber tho!

If you can find one of the special pans for it, beer can chicken is also a fantastic on the grill option. Pour your favorite liquid in the pan, turn the grill on and sit and enjoy beverages while your chicken roasts on the outside and steams on the inside staying nice and moist!
 
pile coals to one side and chicken wings on the other baste with a mixture of hot sauce and butter . I forgot how long to smoke but long enough for the others to get drunk and pass out. Being the last one standing piled a plate full and went home

Tried this method a couple weeks ago. I had heard of it, but never seen it.
I don’t drink so a beer was not to be had at home. Down to the store bought a can and decided just popping the tab was not going to work. Cut the top off the can poured a bit of the beer out and put it into the cavity and on the grill.
Best chicken I have had.
 
On my gas grill I put whole chickens on the top shelf, put tin foil over the bottom grates and cook on low for 1.5 hours. Similar to indirect cooking.
 
I cook chicken that way, as well. But, I start mine over the charcoal for a few minutes to get it crispy, then move it away from the coals.
