Ive forgotten but--what is the proper name to call this meal? Cornbread thread.

Mexican Cornbread? Sounds tasty, minus the corn, may try this soon. Used to have something similar, put some chili in a dish, add a layer of cheese, then put cornbread mix on top, bake.

Not sure? I think Mex cornbread has jalapeno peppers in it--which I also like. Ive also had some from a local bakery that also adds bellpeppers and such.
 
I make something similar that I've always heard called cornbread casserole.

Mix up your cornbread batter, add blackeyed peas and chopped ham or bacon . Place in a greased dutch oven and bake. Dad would put sausage and cheese in his cornbread on occasion. My dad was from Arkansas and my mom from Ohio. Mom loved dad dearly and tried to make home cooking for him on occasion, which meant blackeye cornbread and ham. However she always cooked the cornbread in a muffin pan and dad always used a baking pan. I took after dad I guess because I make mine in a cast iron frying pan.

Possibly--or even Foodloaf?? I remember that was what we served those inmates who were acting like children throwing temper tantrums.They would get a meal made up of left-overs from the night before--mixed and baked in a dough or cornbread mix. That coule be almost anything too. Could be raisins mixed with green beans,peas,carrrots,somekind of a meat substance--all mixed into the bread or cornbread mix--and made into about eight inch long by about four inch wide--loaves. Sounds sickening but--really aint that bad.Going through training--we had to eat some.
 
Growing up in NE Indiana, I remember eating corn meal mush sliced and fried in butter. We would pour maple syrup on the slices.

Thats another im going to have to try--buy towards years end. I also have some real Maple syrup--from Vermont that also needs to be used.
 
I'd call it a hell of a meal, if the cornbread is not sweet.

Sweet cornbread is cake.

Sometimes when im making only a cornbread mix--I do add honey or maple syrup. I like the results--so do a few of my neighbors. Its sweet but not ovely sweat. Also,you can use Caro Syrup too--which to me--has a lighter taste.My grandmother used to make Caro syrup pies

It's called "Corn Bread With Stuff In It".

Whew. I'm glad I got that. It's been bugging me all day.

Or possiby, Stuffed Cornbread or Cornbread Soufflet? But then if a soufflet--wouldnt it also have to have eggs?

I couldnt find any Jaxon corn meal mush but I did find some Polenta at Kroger and its the same thing.

This also reminds me. Ive heard you can use applesauce in place of eggs in a cornbread mix. Ive never tried that before.
 
Ive seen the Polenta for sale here--but usually only around Thanksgiving or years end times. Man I sure wish we still had a Krogers here.
 
According to the package of cornbread mix I just cooked, Mexican Cornbread it just cornbread with cream corn added. Guess adding the meat makes it something different. But tasty...
 
Not sure what that is called if it involves cornbread I would sure eat it. We like to mix in cream style corn and green chili, serve with pinto beans, bacon and fried potatoes. Takes a brave man to face a heart attack that way! Good luck with your dinner.
 
This concoction I never had at home--unless I made it. The first time Iever had this--I was in the hospital with double pneumonia. That was where I also had the biscuit version of it too.
