Spending the rest of the week there for work. Any good restaurants? Things to see or do?

It's been awhile for me, but my most memorable time there was spent at Central Market. It's an old, old, brick building which farmers and others pack to the gills with all manner of fine, fresh foods. I bought some elderberry & blackberry jam from one of the local vendors. Look it up online for more information.

P.S. You asked about restaurants. There is an outstanding one on the south side of town that I recall; unfortunately my recall isn't sharp enough to remember the name of it or the street/road on which it's located. Ask the townspeople when you get there.
 
Lived nearby in New Holland, and don't recall memorable food, but the "Peoples Place" was a nice place to visit.

Amish Museum. The People's Place, 3513 Old Philadelphia Pike, Intercourse, PA 17534

Don't recall where, but there was a good railroad museum near there also.

Hopefully it has gotten better, but my recollection from my travelling days (Reagan Era) was that Lancaster is one of those towns where you were happy to find a Golden Corral.
 
Check out the Amish family dining places, can’t remember the names but on Phily turnpike. Also Frank’s knife museum is on the turnpike, have to go there if nowhere else.
 
A little north of Lancaster, in Leola, is a very nice restaurant called “Reflections”. It’s on Oregon Rd, just off Oregon Pike. Not too far from the city of Lancaster. Great food, really nice atmosphere.

The Strasburg Railroad is definitely worth a visit. The state railroad museum is across the street from it, but I don’t know if it’s back open yet. I know the Railroad is open. Strasburg is not too far from Lancaster on 741. The town of Lititz is nice, just a short ride up 501 from Lancaster.

Strasburg has the railroad museum
Valley Forge is too far-closer to Phila
