And the beans/no beans battle is on!

If there are 2 pots and one has beans and the other has none, I'll take the no beans any day. But if there is only one choice, I'll go with the flow.

In high school one day a week was wieners and beans for lunch. I would have hated to be the janitor that day because the garbage cans were 95% beans.

Our Sales VP had a year end meeting with wives and spouses. On the dinner menu was surf and turf and champagne. The salesman that had the lowest quota sat with his wife on the kids table and ate wieners and beans.

So, what do those stories tell you about beans?

Hosted my first chili cook off last October with about 25 friends and it was a smashing success! I believe there were 14 options and the variety was amazing - some chicken, beef, venison, etc. some hot, some mild. But ALL were really good.

Here’s “crock pot alley” ….

I make chili fairly often . I don't make it like my sister does ? She uses kidney beans , potatoes , celery , ground meat etc . Mine is 3 lbs of round steak and seasoning . Hint --- I start off the seasonings with 6 Tablespoons of chili powder , yes 6 and there is more different ones to come .
Supposedly , as the story goes my recipe is the one street vendors used in San Antonio in the 1840's . True or not , it does make the very best chili I have ever eaten . I got from an old cowboy cook on a large ranch in Texas . He followed along in the " chuck wagon " , weeks on end cooking out in the wilds following the working cowboys . A resupply wagon came along once a week . He followed in the his dad's footsteps , cooking for large ranch's . Regards Paul

Rusty every chili receipe I see from Cincinatti ends with put it over spagetti. Thant ain't chili-that's some strange spagetti sauce with cumin in it. ;)
And remember that historically chili was invented to mask the taste of otherwise foul tasting meats in stews on the range.

My dad was a chili gourmand and made the best chili. Unfortunately, he died before I could nail down his recipe. It took me over a year of experimenting to finally come up with a recipe that tastes pretty much exactly like Dad's. I guess it must be a pretty good recipe because it has won chili cook offs in Utah and Arizona.

Now, as most people know, chili is a meat dish. If you want beans, then serve them as a side dish. When Miss Judy and I were first married over fifty years ago, I surprised her with my chili...no beans. She took one bite, looked up at me and said, "I like beans with my chili." So, I started adding beans to my chili.

About five years ago, someone asked me what the key was to 45 years of a successful, happy marriage. "Simple," I replied. "You put beans in your chili.":D
