We had a camp up in Crawford County, PA when I was growing up. An older German man had about 200 acres of woods across the dirt road from us and he made his own taps and cooked down the sap to syrup. He also used the 55 gallon barrel to smoke a ham in, using corn cobs for the fire. He was an interesting guy from Erie and always had some cool stories for Dad & I. Dad always brought up his interest in buying some of his land but he didn't want to split it up. We always got a jar of maple syrple from him. I never realized how good we had it up there!
 
It's been cold and the trees are aching to bust open when the freeze thaw cycle starts...should be a good year.

I went up to Highland county last year with the intention of buying some syrup. The price on it I thought was ridiculous. Priced like it had uranium and cocaine in it. So I've been buying it at Costco in a big jug. Is there really much difference in the expensive stuff and the Jugasyrup?
 
Absolutely Not! Thickened sugar water and artificial maple flavor is in no way similar. Now there seems to be a lot of differences with the real maple syrup prices in the stores, but that is more a matter of which bottle or label you like the best.
 
Maple syrup, the stuff from the trees, is available in a variety of grades. They range from nearly colorless to a rich dark brown. (I favor the darker ones.) The higher the grade, the more expensive.

And sugaring is still a very labor intensive activity. Folks like to be paid for their labor.
