always been a western fan, would like to belly up to the bar at an authentic one, somewhere between Memphis and the far side of Colorado, any suggestions?

It may be a bit west of your travel plans, but the Palace Bar in Prescott, Arizona has been open since 1877. I've hoisted a couple there myself in honor of my great-great uncle George who mined in the Prescott area from the late 1860s until his death in 1905. I'm sure he hoisted more than a few there himself (along with the Earps, Doc Holliday, etc.). Here is the website:

The International in Austin NV (and you can drive the Loneliest Road in America.)

The bar came from England to a place in San Francisco and then out there. Barely occupied by folks, Austin is a neat little town in the middle of nowhere.

Of course there is also the oldest bar in NV in Genoa at the foothills of the Sierras and the entire town of Virginia City.

Wish I could remember the name of the place in Cooke City.
Waitress told a great tale about the local that left after a few the previous evening,crossed paths with a young bear in his way so he punched it ;-)
 
+1 for the bar at the old Menger Hotel bar next to the Alamo.

Also in downtown San Antonio you can find the Buckhorn Saloon (and museum). It still has some of the furniture and feel from the 1880's. It has been moved several times, including many years at the old Lone Star Brewery. You can walk into the bar and have a drink, but you have to pay admission to see the museum part.
 
Outside of the Irma in Cody and sticking with the limits of your inquiry, I could recommend the Fairplay Hotel in Colorado. Off the beaten path, not pretentious, and the real deal.

You might as well swing by the St. James Hotel in Cimarron, NM.
It's got ghosts, bullets in the ceiling and has been stayed in by an amazing list of personalities, including me.
Actually I stayed in the in one of the 'New ' rooms out back.

National Hotel and Restaurant in Jamestown California...East of Oakdale....been there since the 1850's and the bar is original. There are several photos of the bar from different eras. Kinda uncanny.
