Share your Labor Day Grilling favorites

OK forum foodies.. Labor Day weekend countdown has begun. So what are your favorite tips tricks or menu items for the perfect grilling/smoking experience...
my grilling "secrets" includes the following:
if you are grilling & not smoking, 1. add wood to the charcoal.. apple, cherry, pecan to boost the flavor.
2. chop an onion in half and place on the grill to caramelize.
3. small potatoes with seasoning & olive oil in a ziplock.. place on grill... (remove from ziplock.. )

What does everyone else do for the perfect holiday cookout?

My problem is not what to choose but also.......

Charcoal, Smoking or Gas for the outting.......
or maybe a rotissery job ?

Decisions, decisions.
 
Aluminum foil cooking

Cooking cube steaks in aluminum foil; place a Cube steak, on unpeeled, sliced potatoes, and a small portion of your choice of other vegetables. and a teaspoon of butter, on a double thick sheet of aluminum foil, large enough to fold up the steak and potatoes into a package. The foil's edges must be carefully folded to completely seal the package, and make it steam tight. Then place the package into the coals of a campfire, or on a charcoal grill, completely cover it with coals, or charcoal bricketts, cook approximately 15 minutes, Then remove, season, and enjoy. This delightful meal can't be duplicated, in another manner, it compliments Camping / RV,ing, and teaches self-sufficiency.
 
Cut a head of cabbage into quarters. Place each quarter on tinfoil and add butter, Lawreys seasoning salt and sprinkle with water. Close up foil tightly and place on low heat grill. Top rack of gass grill works. Turn every 15 minutes or so. Enjoy!
 
I usually do burgers. This year, maybe something different. It's all good.
 
Jerk chicken breasts in the smoker, grilled brussell sprouts and corn on the cob, cauliflower salad and many cold beverages. Finish it up with apple crisp pie.
 
1.5" thick ribeyes- rare
1/3 lb burgers- med rare
brats
hot dogs
shrimp

Every year the wife and I get together with my college room mate and his wife. A few of his neighbors show up. We cook the meat, they all bring the booze and sides. Good trade off. Will eat too much, drink too much and be a 47 yr old going on 21.

Fun times!
 
Stuffed bell peppers with a twist.

Stuffed bell peppers done my way. Prepared much as you would expect, stuffed with ground beef and rice, but I will place two, maybe three Jalapenos stuffed with cream cheese inside first, and pack the beef/rice around them inside the bell pepper. Wrap in foil loosely closed at the top, and set to the edge of the grill while you're cooking the steaks.
 
Baby back ribs with Sweet Baby Rays BBQ sauce. Baked russet taters coated with olive oil and sea salt wrapped in tinfoil ( FYI the tinfoil must be removed before eating ). Cucumber salad. :)

I cook on the grill about every other day. I might see if I can find some decent porterhouse. Daughter won't eat any meat but chicken. She can pick what she wants. Wife is hard to cook for. Just another day in the Taylor household!
Although, I've been union all my life. 10 years in the US Steelworkers, then 31 years & counting in the Steamfitters, presently retired. Union wages gave me a good life, especially the Fitters. No parade in Pittsburgh again this year, as far as I know. But even non-union blue collar workers can appreciate the 8-hour workday, job safety, health benefits (which are rapidly declining), workman's comp benefits, usually some type of retirement fund, etc. Also a day off to cook out & drink beer!
 
You've clearly never had a Boy Scout roll his eyes out loud at you given the prospect of foil wraps yet again on a campout . . .

Dove Texas style

Since dove season opens September 1 around these parts, we usually have, among other things, dove. Breasted, wrapped in bacon, soaked in Italian dressing . . .

Muss, not sure if you know this trick. To get dove breast for the Jalepeno (Which you omitted) bacon wraps, a tip is to pull the feathers back from the breast, make cuts at each wing root at top of breast, then pull the entire breast meat off of bone / cartilage. Leaves a heart shape breast with a natural fold in the center.

Also, we add a small dab of cream cheese to the wrap.
 
Appetizers:

Jumbo Shrimp over lettuce with spicy sauce, BBQ Baby Back Ribs, assorted dips and chips.

Dinner:

1 1/4" thick Prime Ribeye Steaks - cooked medium rare

Nathans Famous French Fries or Baked potatoes

Baby Asparagus, Blackened French Green Beans or Broccoli "burnt" slightly.

Corn on the cob

Desert:

Apple Cobbler, Crumb Cake, assorted Turkey Hill Ice Creams, fresh fruit & cherries, and last but not least a fine cigar and bourbon. :D
