Small Breakfast Success

Sloppy weather keeping me pretty much indoors so I began browsing around for food. The YMCA MsNative works sponsored a pancake breakfast the other day so she helped herself to leftovers and as I dug around for a cast iron skillet to reheat I was inspired when I spied the toaster.
While toasting I doctored 2 eggs in a buttered bowl, covered with a saucer and nuked for 40 sec. on Hi.
Pancakes warmed up nicely and while a little bit of albumen didn't quite get firm the yolks were perfect. While I missed the crispy edge of fried eggs I was also without my sides of sausage and grits.
I enjoyed the result.

Grits alone make a pretty good one-dish breakfast for me as long I have some coarse or fresh ground black pepper, pepper jack cheese, tabasco, and sliced jalapenos or green chiles to put on top. Any meal without a little fire is indeed a dull meal.
 
While I missed the crispy edge of fried eggs I was also without my sides of sausage and grits.
I enjoyed the result.

Looks good to me. I always liked to cook my eggs crispy on the edges with the grease a little hot and sunny side up or basted. My wife never liked the crispy edge of the fried egg but I sure do. Man, as we get older the sausage or bacon or grits or potatoes that I used to have with my eggs don’t come around very often. Everything in moderation I guess.
 
\ I have never done them in the microwave but might give it a try.
I had no idea what would happen. I've done scrambled eggs in a microwave but no matter how much doctoring they'll be fluffy but blah. Just breaking the yolk up a bit then nuked in a small bowl works in toasted English muffin with ham and cheese.
These I poked a hole in the yolk with a toothpick and covered with a saucer just in case they detonated.
 
I always appreciate breakfast for dinner... or lunch... sometimes in the morning as well...
