Time to start rethinking the meals I make.
I do like red meat but with the high prices I'm sticking to ground beef. It's more versatile when considering what to make.
Here's how I make beef burritos...
3lb ground beef (can be 80/20 or 93/7 fat)
Roasted jalapenos (always have plenty onhand)
Diced onion (white or yellow)
Frank's hot sauce
Cumin and chili powder ( amount varies to taste)
"Mission" tortillas ( I like the large ones)
Cook the ground beef in a pan along with a some sliced roasted jalapenos. Cooking the diced onions is up to you. Add as much cumin and chili powder to the pan to suit your taste.
Put as much of the mixture you want on a tortilla and add even more sliced roasted jalapenos on top. Add the diced onion if you didn't cook them before. Drizzle some Frank's hot sauce over the mixture and roll it up.
I'll make several in advance and vacuum seal them to put in the freezer although they really never last that long. It's hard to eat just one. If kept in the fridge it only takes a minute to heat up in the microwave.
And if it makes some of you happy... No beans are used.
