Do I keep them on the gun and don't over-tighten the screws, or should I store them off the gun in any particular manner?

Stored on the gun is best, but when you swap out stocks for work, or carry, or display, proper storage should prevent any damage.

Stocks should always be stored with attachment screw snugged down, and a wooden space between the stocks. Prevents warping and chipping of the edges. Wrap with bubble wrap or several layers of waxed paper, and in a plastic ziplock bag.
