Tater soup

We love this tomato soup. One warning. Make SURE you hold the top on the blender when you get to that step. Although impossible under the laws of physics, tomato soup even got behind the refrigerator! This kitchen disaster raked second only to when grandma blew up the pressure cooker canning chili. We did have to repaint that kitchen.

Thicker than soup, not quite stew my wife calls it stoup.
She runs the gamut, whatever leftover meat may be around she'll supplement with a can of something. Fresh vegetable, store bought stock thickened with corn starch or flour. No recipe or real plan, she learned how to dig around whatever is available from her dad.
Last week's was leftover chicken with the carcass and black eyed peas.
Previous was leftover Christmas ham and split peas.

I love "tater" dumplings. My MBH can make them like I like them, just potato soup with dumplings added. The dumplings need to be small. No chicken, no nothing except potatoes, dumplings and soup.

We had them when I was a kid, probably nothing else to eat, but I still like them. Makes me think of Mama.

Have a blessed day,

Leon

taco soup

This is a fail-safe recipe, guaranteed to be liked by all. It is mild as is, so I add a few hot peppers, and a little more taco seasoning.

The recipe yields 4-5 adult servings, and it freezes well.

This soup recipe is easy and tasty on a cool day.

1 1/2 lbs ground beef, browned
1 onion, chopped
1 can kidney beans, undrained
1 can chili beans, undrained
1 can whole kernel corn, undrained
1 can Ro-tel tomatoes, (as spicy hot as you like) undrained
1 14 1/2 ounce can diced tomatoes, undrained
1 4 oz can green chilis, chopped
1 pkg ranch salad dressing mix
1 pkg taco seasoning
1 1/2 cups water

Combine all ingredients in crock pot, cook 2 - 4 hours. Serve and top with Fritos and shredded cheese

I'm on my way to town. I'll be getting some of those little red skin 'taters. They make tasty smashed taters and tater soup. I haven't made 'tater soup in a couple of years. Thanks for posting that Rusty and wakin' up those dormant gray cells.

Good foggy morning ya'll.

I have been watching Cowboy Kent Rollings on you tube, and we are gonna try his homemade chicken soup with homemade noodles sometime soon. It sure does look good.

Have a blessed day,

Leon
