Windjammer's crockpot story motivated me to write this. Soak a chickenbreast in olive oil and season with salt & pepper. Spray the Forman cooker before putting in the chicken. Cook till it's JUST DONE. Not a second more. A couple minutes maybe. Cut it open to check if it's just pass pinkness. Now it will stay moist. Slice the chicken , putting half on a plate. Add a little butter, chopped basil and jalapenos or whatever you like and a BUNCH of any kind of cheese. Put the rest of the chicken slices on top, maybe a little more cheese on top, then micro wave just 'till the cheese melts a little. The chicken will stay moist since it's not overcooked in the first place. You just made a ten minute version of Chicken Kiev or Cordon Bleu that's super easy and a great lunch departure from a hamburger or sandwich.
