Windjammer's crockpot story motivated me to write this. Soak a chickenbreast in olive oil and season with salt & pepper. Spray the Forman cooker before putting in the chicken. Cook till it's JUST DONE. Not a second more. A couple minutes maybe. Cut it open to check if it's just pass pinkness. Now it will stay moist. Slice the chicken , putting half on a plate. Add a little butter, chopped basil and jalapenos or whatever you like and a BUNCH of any kind of cheese. Put the rest of the chicken slices on top, maybe a little more cheese on top, then micro wave just 'till the cheese melts a little. The chicken will stay moist since it's not overcooked in the first place. You just made a ten minute version of Chicken Kiev or Cordon Bleu that's super easy and a great lunch departure from a hamburger or sandwich.

Thanks Wyatt, that sounds delicious... I might just try that.

Anytime I ever make chicken on the Foreman grill, it turns out dry. Probably 'cause I overcook it.
I love to cook, and I'm always looking for something new. I will give the Foreman grill another shot.

I'll let you know how that turns out.

One of our favs is 'NotaGeorge Paninis'~
butter bread or roll on one side, layer with anything in the fridge...cheese, meats, sliced tomato, leftovers, drizzle with Italian dressing or flavored mustards, top with second piece of bread and grill.
My hubby will eat durn near any sandwich, and is particularly fond of these. I just had one with deli turkey and shredded smoked provolone.

Our contact grill is called the "Not a George," because it's not a "name brand" item.

The nice thing is that the griddles pop out for cleaning, and can be washed in the dishwasher.
I liked it so much that I got my brother one, but his has reversible grills, one side for meats and the other side flat, for pancakes and things. It also has a temp control, which is nice, because the other kind without the temp control can get too hot for some things like chicken...the inside is raw and the outside gets black!
 
I really like my Rocket grill....It is a GF like device which stands upright so the grease
really drains off completely. Cooks foods in parchment bags.

One of my favorite recipes is for shrimp. Take four large shrimp and
arrange them so they sort of clump together . wrap them
with four slices of bacon and season to taste.
grill about 5-7 minutes. Eat like a steak or BLT&S sandwich.

This is the same problem I have had but Wyatt Burp's Recipe sounds pretty good.
