Vegetable soup

My wife has had a hankering for vegetable soup lately, so I thought I would give it a try. I bought all the fixing at the store Saturday and when I got up Sunday, I went to it. Peeled and chopped the potatoes, the onion and the carrots. Combined those veggies with frozen okra, mixed vegetables, whole corn and diced tomatoes, beef broth and chicken broth. Got a good boil going and later turned it down to simmer. Added some seasonings later.

When the soup was ready, I made a batch of fried cornbread. I ate until I was as full as a tick. She told me I "done good."

It will be even better on Monday. :)

Since I retired I do all the shopping and cooking as the wife is still working. Thanks for posting this Muley as Vegetable Soup sounds really good today. I'll be hitting Meijers after the gym this morning.
I started using "Better than Bouillon" for all my soups and man does it up the flavor. Plus they have low sodium ones too.

My parents grew all their own vegetables, and my mother would put up what she called her "vegetable soup mix." I don't remember how many jars of the mix were on the shelves by the time she finished, but it was a bunch.

On blustery winter days when I would visit, I'd walk into the kitchen when she was making the soup, and the smell of the spices, herbs, and vegetables would envelop me like a warm winter coat. When she'd set a bowl down in front of me, I had to restrain myself from just wolfing it down. A spoonful of that soup was meant to be savored slowly, like fine wine. The first winter's taste of it would make you close your eyes with pleasure.

There's no place like home.
 
I got a ***or a few years back and learned how to make chicken broth with the left over bones and cut off sections of backbone and wings, etc. (no liver)

A little celery, onion and carrot, is the basic brew with 2 cups of water and then when done, pour into containers, cool, place in the frig. and the next day remove the fat layer on the top.

You can pour in ice trays and freeze, then store in zip lok bags as an option for it's use.

It turns out a mean chicken soup in just 30 minutes, once the lid is locked down and pressured. A great thing for these Winter days. The little lady likes me to add a cup of rice and a bag of frozen peas for a few more items.

Soup is a good thing !!
 
I like diced turnip rather than taters.Also I like cabbage in mine. Boiling water from sweet corn also makes a real good starter stock.
If you're really struttin' and it's around payday get you a piece of brisket-boil it till done and chop it up fer da soup. I've made vegetable soup for years and quite frankly none of them has ever been the exact same receipe
 
You're obviously a man after my own heart. They say that great minds run in the same channels and it must be so because I made a batch of vegetable soup the other day.

My recipe includes just about everything except the kitchen sink. There's ground beef, big chunks of potatoes (scrubbed, not peeled), carrots, onions, homegrown corn and green beans, kidney beans (drained and rinsed), garlic from the garden, stewed tomatoes, beef broth, parsley, a little oregano, and a can of tomato paste.

Let that simmer on the back burner for a couple of hours and it's ready to eat. In my mind, nothing beats a hot bowl of homemade soup along with a big chunk of either cornbread or a crust of homemade sourdough on a cold blustery day.:)

Use V8 juice for the base...

I was working in a Pharmacy inside a grocery store quite a few years back when the store's butcher came up to me and asked if I would like to try some of his vegetable soup...I did and I have to tell you it was the BEST I every ate...I asked him his recipe and he said the key is to use V8 juice as the base...I get a large V8 juice and put it in my crockpot then add green beans, corn, cut up potatoes that have been par boiled, and chunks of beef stew meat that has been boiled for about 2 hours to get it very tender, a little pepper and let it simmer in crockpot for a couple of hours (if you can wait that long after you try it!)...it is by far the BEST flavored vegetable soup I have ever tasted...the V8 juice saves a lot of time in making the base..it is quick, easy, and perfectly seasoned...try it and let me know what you think...after you try this I seriously doubt you will make it any other way...ENJOY!...Roger
