What is "essentials package"?

I see guns for sale, new, advertised as "essentials package". What the heck is that. They are normally cheaper. Different gun? Older model? Less goodies? What?

It's a marketing gimmick. Plain and simple.

I've mostly seen this with XD pistols.
With the regular XD/XDM/XD-S, you get a Pelican style hard case, Generic Mag Loader and Inexpensive Holster (Paddle Holster with the XDM and XD-S lines). The 'Essentials' package is just the Pistol, Mags and Back Straps in a generic Plastic box for about $100 less.

As for other brands... Not sure.
