Woodworkers, Electric hand planner?

I have a 13x13x2" butcher block cutting board. Doweled Maple.

Want to totally refinish it. I have used a belt sander on it before and resealed it. There are some deeper cleaver cuts that I want to remove.

Can I use a 3 1/2" hand power planer on this> I have used bench mounted were the whole surface is planned at once but do not have one of those,

I do not want to make hills and valleys in it;) Also not sure if it is powerful enough to cut this wood (6 amp)which is very hard.

What about the edges will it chip the heck out of them??
 
It can be done with a hand held planer and then hit it with the belt sander followed by a finish sander.Id set the cutters very shallow to start with and see how it behaves.

What about the edges will it chip the heck out of them?? (Yes, if you run off the edge instead of onto it)

On a butcher block I would use a low angle smoothing plane (manual type). But then I got trained by my Great Grandfather who did his apprentice cabinetmaking in Germany at the end of the 19th century. I do have an electric hand plane (Bosch) but when I use it, it's only for "rough out" work, almost impossible to get the depths to match from one pass to the other. Personally, I'd leave the divots as "personality". People pay big money for "personality". ;)
 
I have all my Dads hand planes, big small, all high quality tools.

Actually have all his tools. Yes, I thought about the "character look" I probably should leave it alone.

If you do plane it ,get a very coarse belt to start with sanding.
