I have two large roast thawing to make some beef jerky tomorrow. Most of the time I just use a plain Jane recipe but would like to try something different this time.

If you have a recipe that you can share please do so.

Thanks in advance.

Gentlemen- Goggle has all the answers

I know that and did a search prior to posting but I'
d like to have a "Hands on results" that a friend on this site could give. Goggle has 1,000,000,000 recipes. I'd like to narrow it down to a few of the ones tried and trued here.;)

I usually make mie out of diet lean ground beef. 95% or better lean and use a food dehydrator. They have jerky seasoning packets that taste great. You could grind your deer or beef roast and use that with very good results. If you want to make strip type jerky there are many options and go to youtube and search for beef jerky and there are many videos to watch. One of my favorite ones is Alton Brown from the food channel his show it Good eats. If you grinde it you will need a jerky gun or some type of press.

My Spicy Jerky recipe

Bone out the round from a hind quarter. Freeze to the "break point" abt 28'F. Slice real thin along the grain. Place 8-10 oz in a freezer ziplock bag and add Dale's Steak sauce(or Soy sauce), enough to get everything wet and then some, 1/2 tsp MSG(Accent), 1 tsp full dry Jerk seasoning, 2 tbsp Tabasco sauce and a couple of teaspoons of honey. Mix well and place in refrigerator overnight or longer.
Remove from marinade, pat dry, and dredge in a mixture of fresh ground black pepper(lots), brown sugar, and garlic salt. If after the first batch this is not hot enough for you, add some Cayenne pepper powder.

Dehydrate and enjoy!

I don't know why but the honey really helps the coating to stick.
