It appears as though I'm not the only one on the Forum who likes chocolate. Gee, who'd a thunk?
Got this one from a brother in I-Duh-Ho. Comes together real quick, don't need to frost it.
Chocolate Oatmeal Cake
Ingredients
1 Cup quick cook oatmeal
1 3/4 Cups boiling water
1 Cup brown sugar
1 cube melted butter or margarine
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt
1 3/4 Cups flour
1/4 Cup cocoa
12 oz. package milk chocolate chips
1 Cup chopped (I break them up) pecans
Directions:
Preheat oven to 350 degrees. Put oats in a medium or large mixing bowl. Pour boiling water over oats. Add sugars, melted butter, eggs, and vanilla. In a separate bowl, combine soda, salt, flour and cocoa, then add to first bowl and combine thoroughly. In a small bowl combine chocolate chips and nuts, add half to batter, reserve other half. Pour into greased 9 x 13 cake pan. Sprinkle other half of chips & nuts over top. Bake 35 minutes.
