Other than the grips/price, can anyone tell me the difference between the standard 637 and the Performance Center 637?

Action/trigger pull is smoother & lighter, I believe the trigger is polished.

It is. Also the hammer, cylinder flutes, ejector thumbpiece and screw, and the sideplate screws. As to which action is better, that seems to depend on which "informal generation" of the PC you come across. My PC 637 with spurred hammer is really no smoother than the standard model I carried while working. Then again, the 637 Wyatt Deep Cover PC models are the slickest J-frames I've ever handled and fired. To carry the question further, the 442PC "Chattanooga" models have actions that are barely acceptable. Sadly, there are apparently no hard and fast rules when it comes to actions of PC revolvers, especially the J-frames.
