Tomatoes and peppers are in peak season, so I made my 3rd batch of fresh salsa this season. This is my best work yet, but It'll light you up!

I roasted 2 large tomatoes, 5 tomatillos, 1 large onion, 4 large jalapeños and 2 habaneros. Pulsed it in the food processor and mixed it with 4 diced drained fresh tomatoes and 2 thinly sliced bunches of green onions. Added some jalapeño vinegar, cumin and a little sugar and salt. It yielded about 6#'s of flaming joy!

Great on nachos, tacos, hot dogs and eggs. Also great with Frito Scoops. This batch should last the Mrs and I about 2 weeks!

It's also good insurance that the buzzards and coyotes won't eat me if I drop dead working in the yard! :p

Looks like you have all the right ingredients to keep it from being just another dull and mild salsa.

Looks wonderful! I make some homegrown goat cheese that would be perfect with it.

I should make a batch of mine. I am not an extreme heat guy so I usually use jalepenos and serranos. If I'm making it for others who like the heat, I usually add a habenero or two. Have to find my recipe though. Had some neighbors who made salsa for a living and would give me all I wanted for free. Kinda made making it a moot point.

Do you use the whole pepper or remove the seeds and pith? What is jalapeno vinegar? Haven't heard of that. All sounds very interesting. Might give it a try. My peppers are going gang busters but my tomatoes are under attack by a local herd of chipmonks. Also, got a recommendation substitute for the tomatillo?

Whole peppers; I only remove the stems. I always have a jar of pickled jalapeño slices in the fridge and add some of that seasoned vinegar (4 or 5 tablespoons).

Roasted ground tomatillos act as a thickening agent and give the salsa a nice flavor. I don't know of any substitute. Kroger usually has them in the produce section, next to the tomatoes, garlic and ginger.

Here's some "work in progress" photos from a previous batch. This batch also had red bell pepper and garlic.

I can't do the really hot stuff since the heart attack July 2024, but I never really got over the craving, especially if there are fresh cooked tortilla chips and cold beer around. I can't contribute any recipes, but I can contribute a very old, totally true story about a pepper that I have never heard of since the incident.

I've always been in heavy construction most all of my career with high steel, power plants, hydro dam building, etc. Early 1975 found me in Brunswick GA and the iron workers were putting up a test stand for Babcock & Wilcox. Anyway, one day the Millwrights asked me to join them for lunch at their shack, so I did. Of course like steelworkers everywhere they had a rod oven for preheat and moisture control of weld electrodes, but THIS rod oven had never seen a weld rod....it always held a ham, brisket, etc. Man-o man that smelled good so one guy said here...try on these home grown peppers right out of a Mason jar. The other guys each grabbed on and were chowing down and they were not super hot so I said "sure" and grabbed one. One big bite and of my gosh.........mouth burning, eyes watering so bad couldn't see, breathing seemed hard as heck to get air, ran for the water cooler but it was empty! It was a horrible trick to play on a newbie but when over they showed me how they had "salted" the jar with mild all around this one that was made prominent just for me.

The pepper I was told was known as Hungarian Red and like I said I never heard about it then or ever since. I know Google is your friend but I just have never got around to using it and until this post about "fiery peppers and salsa" I never gave it a thought.

True story and for all I know one of those clown Millwrights that nailed me good....just might have become a Smith & Wesson fan and be on this Forum still home growing something he called Hungarian Red's!
