While I fancy myself a somewhat accomplished BBQ and smoker guy, I have never ventured into making up my own beans. Well, I just picked up a big ol' cast iron dutch oven...how about sharing some favorite bean recipes (or anything else) that I can make in this on the grill/smoker? By the way, I am a die-hard wood fire guy....

Not Mine But

Heres one I've been useing for about 3 years it's from a guy I taught to smoke pork, now he does those compitions. But he made this up not me.

(Beans that will even make Chili Heads happy)

6-8 strips of bacon cut into 1/2 inch squares
1/2 Medium onion, diced
1/2 Bell pepper, diced
1 - 2 Jalapeno Peppers, diced (seeding is optional)
1 - 55 ounce can Bush's Baked Beans
1-8 ounce can of pineapple chunks, drained
1 Cup Brown Sugar, packed
1 Cup ketchup
1/2 - 1 Tbs. dry (ground) mustard

Saute bacon pieces in fry pan until crispy and remove from pan with a slotted spoon. Saute onion, bell pepper and jalapeno pepper until tender.

In a large mixing bowl combine beans, pineapple, brown sugar, ketchup and dry mustard. Stir in bacon pieces and vegetables. Pour into a 12X9 or a deep 9X9 aluminum baking pan. (While mixing if things look dry, add additional ketchup 1/4 -1/2 cup at a time)

Place in a 220-250° smoker for 2 1/2 - 3 hours (make sure temperature of the baked beans reaches 160° ) or place in a 350° oven and bake for 1 hour.

NOTE: If you are making these beans as a side dish for Kansas City style pork ribs, smoke the removed skirt meat for 1-1 1/2 hours, then dice the skirt meat and stir into the Baked Beans.

DISCLAIMER

With the Jalapeno pepper and the dry mustard these beans have the potential for some MAJOR heat. CAUTION should be exercised when feeding these beans to small children and/or the elderly.

To make this recipe Family Friendly, omit the Jalapeno pepper and the dry mustard.

OK thats his way and I can say this will make the beer go down faster than a lead ballon.
 
Sweet and Spicey Beans

Here is a simple, incredibly delicious bean recipe: Start with a large can of B&M beans. Drain off the excess liquid. Add (in no particular order) the following: 4 tablespoons of Molasses, quarter cup of brown sugar, two tablespoons of mustard, on package of Onion soup Mix, one tablespoon of cracked black pepper and 3 tablespoons of Pico Pica Hot sauce. Simmer on low heat until they bubble, shut them off for a while and then heat them one more time.

These will be sweet to the taste with a bit of a firey after bite - want more fire? Add more Pico Pica and pepper. they are great cold the next day as well
 
I'm sorry, BUT you can not make good baked beans (or any other vegetable) with CANNED beans.

You need to start with dry and soak them overnight. They will still have a much firmer texture than the mush beans.
 
IMO beans and corn on the cob (grilled) are every bit as essental to a good B-B-Q cookout as is the bread and salad you serve.
I do 'bake' the beans I cook up on my grill - I use wood fire. but as others here I use B&M beans add 2-3 slices of bacon diced and some jalepeno slices, and about 1/4c. each dry mustard and honey or mollases. stir all up well and cook in cast iron pot indirect heat for 2 hrs. or until bacon is done.
 
What happened to salt pork(butts meat).dried navy or pintos or both,dried mustard, black and red pepper and mollasas or cane syrup and slow cooking?
 
Must be a southern thing!

These recipes I've been reading that call for sugar & molasses must be the candied beans for desert. I suppose they are required to sweeten up you southern sour-pusses :)

I like yankee beans & ham. I add garlic & fresh jalapeno. Serve with biscuits or corn bread. Add BBQ ribs and an ear of corn. Sounds like dinner to me!

When you are cooking a pot of beans, slow & easy on the heat. If you scorch one bean, they will all taste burned! Simmer rather than boil, a bean pot takes time & patience.

Every few months I get a craving for a full-on English breakfast, with eggs, bacon or sausage, tomatoes, mushrooms, hot tea.......... and these beans. I don't understand why we can't get Heinz beans in tomato sauce here in the states, other than the "international foods" section of some stores. Not too sweet, smoky, or spicy. In other words, typically English. Good on buttered toast, too.

I like the look of the Alton Brown Dutch Oven Baked Beans. As near as your g**gle search. Not too sweet and uses real beans that YOU cook, not some factory beans, no matter how tasty they may be in a pinch.

I don't mind using caned beans. Because it has more to do with what I do to them.

1lb. bacon diced
2 or 3 onions diced
some brown sugar
some molasses
A few shots of mustard
1 gallon beans.

Brown bacon. Set aside.
Add onion. Sweat slightly.
Add bans and bacon to pot. add sugar, molasses and mustard to taste.

Add 2 or 3 pounds pulled pork.
