Omelette for dinner, easy one-skillet meal

Asked my wife what she would like to have for our anniversary dinner. She has always liked my omelettes, and that was the choice.

Handful of fresh asparagus sprouts sautéed lightly in olive oil and butter, light application of garlic salt, then chopped. Leftover ham diced. Slice of onion diced. Bit of bell pepper diced. Couple ounces of shredded cheddar cheese. 3 eggs whipped up in a bowl.

Skillet was still hot from doing the asparagus, so the whipped eggs went in over medium heat. Add the cheese while the eggs are still liquefied, let it all blend together. Sprinkle on the diced ham, bell pepper, onion, asparagus. When the eggs have started to brown at the edges use a spatula to turn it in half, then brown on both sides as the cheese oozes out.

Served with slices of buttered whole grain toast and a side of marinated cucumber slices. Opened a bottle of chilled California chardonnay. Bouquet of a dozen roses on the side board.

After the meal I cleared the table and did the dishes.

Another home run! I haven't lost my touch.

Cleaning the table and doing the dishes was my master stroke. The dozen roses made a nice touch. Wine in a bottle instead of a box, with a cork instead of a screw-cap, another subtle thing.

It truly is the little things that make me appear to be a master chef!
 
Lobo, your anniversary dinner sounds great! I'm glad your wife appreciated it. The only 3 things I can do exceptionally well in the kitchen are:

1) I make what I think is a world class Cheese Cake
2) Killer Nachos
3) Great Omelets

Other than that I am not much of a chef.

It isn't my anniversary, but I bought some strawberries...cut 'em up... slight mash and some sugar to make juice...cooked a small pound cake... cooled down good. I did wimp out and bought whipped cream in a can... Just brought the ol battl...um ...lovely bride some... So tonight, she likes me again. Going to talk her into buying a new pickup truck...Maybe! Your rendition of the omelet was a great idea. Congrats on the anniversary. I think most of us HE men would be lost without our better halves! Right Caje? Might have to try the omelet...she likes eggs
