Asked my wife what she would like to have for our anniversary dinner. She has always liked my omelettes, and that was the choice.
Handful of fresh asparagus sprouts sautéed lightly in olive oil and butter, light application of garlic salt, then chopped. Leftover ham diced. Slice of onion diced. Bit of bell pepper diced. Couple ounces of shredded cheddar cheese. 3 eggs whipped up in a bowl.
Skillet was still hot from doing the asparagus, so the whipped eggs went in over medium heat. Add the cheese while the eggs are still liquefied, let it all blend together. Sprinkle on the diced ham, bell pepper, onion, asparagus. When the eggs have started to brown at the edges use a spatula to turn it in half, then brown on both sides as the cheese oozes out.
Served with slices of buttered whole grain toast and a side of marinated cucumber slices. Opened a bottle of chilled California chardonnay. Bouquet of a dozen roses on the side board.
After the meal I cleared the table and did the dishes.
Another home run! I haven't lost my touch.
