Good summer eats!

I'm being invaded by my youngest granddaughter tomorrow. Then tomorrow her brother and parents will invade before taking her home. So off to the market I went to pick up salami. That is one food every kid in the family will eat and be happy!

While I was at the market, they had a bushel basket of vine ripened tomatoes. I needed eggs already, so I got 3 pounds of thick sliced apple smoked bacon. I already have Dave's 21 grain bread. This means that grandpa gets a B.E.L.T. sandwich (Bacon, Egg, Lettuce, & Tomato sandwich), we like to add a thick slice of aged Swiss Cheese also.

My folks were broke when I was young, so I never developed at taste for the better mayonnaises of the world. I am a Mircle Whip kid, and use the olive oil version now days.

So, the BLT season is here! Do you use a simple version or have a Deluxe variant?

My wife uses a Mexican Hot Sause, I never cared for that.

However the Horseradish sound like a winner!

I did see Duke's at a local store last winter, it's not there anymore. I guess Ohioans have no taste for Duke's. :(

Had My first BLTof the summer last night ...
Got Free Boar's Head Bacon with a pound of sliced Tavern Ham and my son shows up with three Beefsteak Tomatos ...
Toast bread , mayo , cheddar cheese , lettuce , avacado slices , bacon , several slices of Tomato ... more mayo on the top toast ... It was the Best and sloppiest BLT I ever made / ate ...
I made two , my Wife made two and that used up 1/2 of a Beefsteak Tomato ... those bad boy's are big and good tasting !
Best Part ... Doing it all over again Tonight ...
BLT with cheese and avacado ... Yeah Baby !!!

I think Duke's is a "Southern" kind'a thing. My Mississippi born bride dotes on it!

I disliked (Hated?) mayo for years - until I discovered that Miracle Whip and mayo aren't the same thing! LOL!
I've always been partial to Hellman's, but my bride is "INFLUENCING" my preference now! LOL!

Good deal on seeing the family.

For BLTs I keep it pretty simple, nothing fancy. I may mix up the bread between white and wheat of the more ordinary varieties, not anything fancy. I love GOOD bread and often bake my own but the BLT calls for regular bread for me.

My mayo of choice is Hellman’s. I’ve tried Duke’s and it’s good but it’s slightly sweeter.

Tomato, beefsteak is nice this time of year but more often it’s just regular old vine ripened.

Lettuce should be iceberg. Anything else lacks the crunch. I have had BLTs out and when restaurants try to upgrade it with fancier lettuce it’s LESS of a sandwich perfection.

Bacon I prefer regular thickness here, cooked on the edge of almost getting to crunchy stage but still flexible a bit and definitely not overly limp soggy bacon.

Perfect sides……a good dill pickle and some coleslaw. Wash it down with a V8.

Dukes just started showing up in upstate NY. They want $7-8 a jar. Hellman’s is still running 5-6.

I did a side by side taste test on BLT. Both good but still like the Hellmans. The color of the Dukes was less yellow and had more of a translucent look. Like it was more oil and less egg than Hellmans. Slightly less thick too. That translucency and thickness made it look more like the store brand “salad dressing” that isn’t even labeled as mayo. The Hellmans looks much richer in comparison. Uncle Ed mentioned Dukes uses apple cider vinegar, that may explain the slight sweet note.
 
I have been having BLTs and club sandwiches for dinner here there as the summer heat is here.

Last night I went even lighter. I made a little charcuterie board of Speck, Lustenbourg cheese and a peach sliced.

I have an East Coast Son-in-Law that won't eat bacon unless is limp and translucent! Yuck!!! A pig gave his life for my pleasure, show some respect!

For years my father would complain about bacon. "It's overcooked! Too crispy! Should be a little chewy!" the rest of us thought he was out of his mind, but we went along with it. I spent years eating limp bacon because that's the way HE liked it. Then one day, he just flipped. "Bacon should be crispy!". No reason given and in fact he claimed to have always liked crispy bacon. Never found out what that was all about.
 
I was raied on Blue Plate Mayo ... my New Orleans born wife prefer's Hellman's . Dukes is not as sweet as I prefer my mayo but is still good ... I don't care for Mirical Whip at all ... that stuff just ain't right .
I like to dip my french fries in mayo ... I sorta have a mayo addiction !

Only Dukes. They make tartar sauce now that is really good. My tomatoes have been coming in for a couple of weeks. Last night we did grilled cheese sandwiches with tomato slices on them. Tonight it is cottage cheese and tomatoes. Tomorrow night is BLT. I pick my tomatoes at the “breaker stage” when they have turned about 50% then finish ripening on the screened in porch.

Bacon Must be Crispy ...

Heads Up ... Boar's Head has come out with a Pre-Cooked Bacon ... about 60 seconds in the microwave oven and it's cooked Crispy - Crispy like you stood over a hot skillet and fried it ... it taste great too !
No Mess , Quick , Easy and good tasting ... but no Bacon Grease . Oh Well ... the stuff is great for a quick BLT !
I don't know who invented Pre-Cooked Microwave Bacon...
But both me and the wife Love it !
No frying pan to clean , no grease spatters on the stove top

Saw a video last night where a guy made grilled cheese hotdogs.

Cheddar and monterey Jack cheese grated. Put enough (your idea may be different than mine) in the buns (he also said to use good quality buns, not the cheap stuff). The hot dogs were slightly sliced through the skin and then pre grilled on the griddle (I'd have to use a skillet on the stove top). He also used some peppers (jalepenos I believe) and added a few on top of the cheese in the bun. Then he placed the pre grilled hot dogs in the buns. Then he put more grated chess on top of the hot dog and bun.

Very carefully turn them over with a spatula to keep the cheese/hot dog/peppers in the bun and place them on the griddle. Fry them till the cheese is melting and then using the spatula turn them again so you're cooking the bottom of the bun, too.

They looked to awesomely delicious. We're definitely going to have to try them.

Oh, he cut them in half across the middle and dipped them in some kind of mustard before taking a bite.
 
I'm another Hellman's/BestFoods guy. But the single most important add on to a perfect BLT is fresh New Mexico Green Chili strips. Preferably the hot or extra hot variety! We have lots frozen fresh roasted so easy to add to anything at any time.
We had Tamales with fried eggs, grated colby/Jack cheese, red chili sauce, and avocado for breakfast so you can see how it works around here....
