Beef Tongue

You Guys slay Me. My Mom cooked them for Herself sometimes. I tried it once. Don't remember if I puked or not. Of course My Mom cooked all meat until it was cardboard. Wild game She cooked longer.

Looks like we're the only two that hate it! lol
Maybe mine wasn't cooked correctly, it was in tacos in Texas, so...?
I puked fwiw.
 
We used to have tongue on a fairly regular basis when I was a kid. My mother bought it at a deli and we had sandwiches. It was pretty good as I remember, but I've only had it once or twice as an adult as not a lot of places sell it.

BTW, a lot of what we now consider "delicacies" started out as "poor people" food because the poor people got the leavings and scrap parts left over from rich peoples food.

I know a women who won't eat any of it because of that.
 
Boiled and sliced for sammiches like corn beef with mustard.

We used to have cow tongue sandwiches back in the days when we did our own butchering. I don't think that I've had any cow tongue for over 20 years.

When I was a kid we would split a cow with buddies of my dad each year. We knew the farmer and the butcher, so my dad would go pick it out and Joe Hofbrow would cut it to dads specs. Well, they loved the tongue. Now I am not a picky eater but I didn't like it. My mom would cook it and serve it on sandwiches cold. They also ate some stuff called braunshweiger didn't like that either. I did not eat liver or heart and still don't.

I love Indian food, and there's a south-Indian patty offering like that with beets. Delicious.

As to the tongue, it's definitely a frequent offering in the taco places, as mentioned, called lengua. Goes great with it's cousin from the other end, tripa, LOL.

They also ate some stuff called braunshweiger didn't like that either.

I can't recall the difference between that , and Liverwurst. Perhaps one is cow and the other pig? Either way, also good stuff with mustard onions, and a strong cheese for balance.
 
It appears that you have a great variety of tongue recipes, and I’ll not add to the list.

I came from a farm-oriented family, where all of a butchered animal was used but the squeal. My family wasn’t impoverished, but, we were taught from birth, frugality.

I've eaten most of the things mentioned in this thread, but I’ve, absolutely, spared myself some of them.

One of my families’ favorites, was animal brains, generally obtained along with Tongue, liver, pig feet, tails, etc. they were prepared like scrambled eggs, were almost discernible, from them, and delicious.
