Collards are in the pot!

We season ours with seasoning meat from a local farmer's market. The package says "Pepper Jowls-dry salt cured pepper coated" pork. Even though it's in packages when you walk into that market you can smell it as soon as you walk in the door. Smells just like the old smokehouses used to.
 
Just had a bowl of sautéed escarole. Not that I don't like some collards but escarole with onions and maybe some cannelloni beans is like eating candy.
 
Had em twice, that's enough, prefer spinach,raw.

Same here. I prefer raw spinach to lettuce for salads and sandwiches. My dislike for cooked spinach started as a kid when mom used put a large spoonful of cooked spinach on my plate. Looked like pond scum. Didn't care much for the smell either. Dear old dad would douse his with vinegar. Just nasty! Pass the corn, please!

My mom used to mix the cooked spinach in with smashed potatoes to tame the taste. She gave up trying to get me on board.
Amazing how the taste differs so much.

Bring on the Buitoni and Ronzoni. :)

In my world, corn and green beans are the only acceptable veges that can be mixed with mashed potatoes. :)
