Is this feat as simple as changing the cylinder assembly, and the hand and getting them fitted? Just wanted to mak sure before I bought a 627 to do this to....

I recall that question has been asked before that the response was negative. I do not recall particulars, could be the cylinder would not fit. I do know that the hands are different, but that should not be the controlling factor. Why not just buy an eight shot 627? There are not a lot of six shot 627's out there, the most common being the 627-0 with just over 5,000 made in the late 80's.
The barrel and firing pin are offset in the frame in the 8 shot guns as compared to the six shot. Not practical to attempt a conversion.

I guess I was thinking that if you can easily convert a 617 6 shot to a 10 shot the conversion would work out just fine. I guess when you say the firing pin is offset I don't quite understand....I understand what you are saying but when the gun fires wouldn't everything have to be inline with the barrel wich is at 12 O clock?
