Different weights for same caliber?

Is there a "master chart" somewhere that gives bullet weights for different calibers?

What are the bullet weights for say the 40 cal and the 45 acp?

Pick up a reloading manual; should have what you seek. Or else just look online at reloading info for the caliber you have in mind. There are lots and lots of bullets available for most calibers.
 
There are an almost limitless number of bullet weights for any caliber.

For the .45 ACP, for instance, the 200, 210, and 230 grain bullets are most common. But other bullets can be found from 185 grains to over 230 grains.

Reloading manuals are probably the best source for these bullet weights.
 
Take a look at the Hodgdon Load Data Site. It will show you all the bullet weights that can be loaded in any caliber. (as will other load data sites) They list bullets from 125gr to 200gr in the 40 S&W and bullets from 155gr to 230gr in the .45 Auto.
