I agree with the "game shears". I hunted quail a number of years and my two accomplices were very seasoned bird hunters of many varieties and for them it was game shears.
Helping picking out a knife.

I think a good present for him at an affordable price would be a Case StockMan design knife. I just bought one from E-Bay for $38. Very nice, sharp knife. Also I like the one with the high carbon steel blade, not the stainless steel blade. IMO the high carbon steel takes an edge easier, and will also take a sharper edge. Overall a great, afforable knife. Tom.

Buy him a Made in China - Stainless Steel knife and keep the Kershaw.
