Hot chicken curry

My wife brought up the fact that we haven't had any curry in a while and with all the stuff we've been going through we deserve a treat.
Properly cooking curry isn't something you can throw together real quick, it's a family activity. There's an order to doing the fixin's and while one persons doin' the cookin' the other's doin' the cutting and preparing. After it simmers a little it's time for a treat. My wife cut the celery, carrots and potatoes and I sliced the chicken and did the cookin'.
First pic is the three burners going and the chicken's just been transferred from the wok to the sauce and potatoes.
Second pic's the finished product on a bed of white rice ready for serving.

Snubbyfan, that looks REAL good! I do have a question though. Isn't there supposed to be a pistol or revolver of some sort somewhere in the picture?:confused::cool:

Knew I forgot something. Well, there is a knife block full of knives and beer.
Maybe next time I'll put two guns in the pic to make up for it.
 
That kitchen looks like it means business! I want a picture of you dual-wielding chopsticks and beers too. ( i know it's for two people...but I still want to dual-wield pic)
 
Damn, that does look good. I do a lamb curry in my pressure cooker that turns out well, but it does not look as nice on the plate as yours does.
 
I haven't had any since my wife became disabled and died. I really miss it, buT you can't cook it with just one person!

I get the curry mix at International markets or Asian stores it comes either as a paste or blocks that you melt in water. It's usually available as medium or hot, I always get hot. I have no idea how much we use of each ingredient, we do it by eyeball, you know, that looks about right.
It's mostly a matter of timing and as medxam said you can't cook it with just one person. It's more of a family activity.
We start out by preparing the rice, then the sauce, bring it to a boil then reduce the heat, cover it and let it simmer, stirring occasionally. While it simmers my wife cuts the 'taters and I'm cuttin' the chicken. The 'taters go in the sauce and simmer as I cook the chicken in a wok and my wife's cutting the veggies. We wanted to use bok choy but couldn't find any so we substituted celery, too much celery cuts the spices so don't use too much. We also use chopped carrots. When the chicken's done, in the sauce it goes. Then you cover it and let it simmer for a little while. After the 'taters are almost done, add the veggies and let it simmer for a little while longer until the taters are cooked but not so long that they get mushy.
Put the rice in a bowl make a depression in the center and ladle the curry in the middle. Serve with chopsticks and cold beer.

one of my favorite dishes is curry, extra hot, and a couple of pints of cold Guinness
 
It is sad that no-one has picked up the basic error in the OPs preparation of the ideal meal.

The wine that you drink while you are preparing the meal. I like the idea of everyone helping with the preparation (but I live on my own) and that makes a good choice of wine essential.

If the meal turns out to be a disaster, everyone is so pi***ed that they don't care, because they enjoyed the prelininaries. That's what good cooking is all about.

Sure you can! I'm a widower too, and I do it from time to time. It just takes a little longer and leaves you with leftovers that re-heat quite nicely.
