Ka-Bar Extreme Fighting/Utility Knife or

Hogue EX-FO1 7"

and I also have a old Cold Steel Recon Scout.......................

That said.......... until the EOTWAWKI my EDC at the cabin is a 5" Ka-Bar MkI ; repro of the WWII Navy Deck knife.

Opinel #13. Almost 20inches long. I have bigger, but they are swords or machete's.

I collect bowie knives. I have one that is over 14" which is a quality made knife. I have one over 19", which is not.
 
When I butcher I use a 14" bladed Dexter butcher knife. This is a good size for butchering hind quarters of elk sized animals. I have a 16" bladed butcher knife for butchering moose sized critters but I loaned it out to a friend in British Columbia and have not seen it for a decade or two now. At present I am trimming tree on my property and am using an 18" bladed Bartaux machete.

Mine are all hunting knives, and the largest is a Buck #119 that has a six-inch blade. I have a monster Swiss Army knife, though ;)
