Lord of the Universe....and meatloaf

Meatloaf as a main dish was OK, but I loved cold meatloaf sandwiches.

Meatloaf as a main dish was OK, but I loved cold meatloaf sandwiches.

...how people got tired of leftover turkey sandwiches. The longer it went, the better it got.

I'm making meatloaf tonight, so I snapped some photos...

Buttermilk substitute (half & half with vinegar) and veggies ready for the food processor...

Processed veggies, liquid (see previous post) and Panko...

The seasoned beef/pork packs were 1/2 off with a BBD of 10/8/24. That's what dictated the menu.
Watch off, hands washed and now comes the messy part...

Ready to get covered and put in the oven...

It'll be ready at 5:45, but I always promise my wife we'll eat before 10pm. Setting low expectations is much better than plating up 5 minutes late!

1 lb lean ground beef + 1lb other of your choice. sausage, ground chicken, ground pork, ground turkey are all good.

one egg

spices (to taste):
salt
pepper
cumin
smoked paprika
dry mustard
dried basil
cinnamon (don't need much)
cocoa (don't need much)

diced up onion and celery.

mix it all, shape into a somewhat meatloaf-like shape in a cast iron skillet, bake at 350 until internal temperature hits about 135.
