New Smoker..Need Help & Advice

Change in menu plan. The salmon is out....the good news is that LOBSTA'S are in! So I'm just smoking the turkey breast. I decided on apple for the smoker. Thanks to all for your advice and suggestions. I'll let you know how it turns out. Supposed to stay cold, damp and rainy this weekend, but hope for warmer air and some sunshine on Memorial Day.

Prices of crawlahs are already dropping quite a bit... saw them by the side of RT1 in Nobleboro for $3.99 a pound on Friday.



Never thought I'd see the day when Lobster was half the cost of Fresh Cod.



I like my bugs on a dirty rug! :)

Charcoal and water soaked mesquite chips and apple juice instead of water in the drip pan always pleases :)
 
The Results....or ?

Well, the weather was perfect.

The turkey breast was dry and overcooked. Fortunately, I was prepared with alternative menu items which was probably the only smart thing I did the whole day long.

I followed the directions to the letter. Despite that and using a meat thermometer, apple chips soaked in whiskey and plenty of liquid in the drip pan, we could have played football with it. The dogs were very happy that afternoon.

Everything else was a success, everybody had their fill of food and refreshments. Thanks to all once again for your advice. Next on my list is ribs, I'll try not to destroy them and check the meat more often for "done ness".
