Pan fried squirrels and gravy

Squirrels, rabbit, and other wild critters are good. The rabbits have lots of good meat on the back and rear legs. With some of the MBH's homemade biscuits and gravy, it's fit for a king. The old ones need to be parboiled then fried because they are tough.

Lots of pecan,walnut and hickory in North Georgia, squirrels were fat, but my mom never fried one. They ALL went into the pressure cooker, came out like Colonel Sanders. I always enjoyed those meals.
 
We always squirrel hunted in the spring and fried the young ones. If old
my mom stewed and made dumplings with those.
I'm always amused at those who turn their nose up at squirrel, rabbit or other game but will hog down brats, bologna or other processed ground up whatever.

I wish there were squirrels around here big enough to be worth shootin, cleanin, and cookin. The ones around here are about the size of big rats or maybe chipmunks. I guess its 'cause they got nuthin but pine nuts to eat.
Back home (SE Missouri) where there are hectares of oak trees and they eat all the acorns they can hold they grow big enough to be worth the effort.
 
I had it as a kid at my grandparents. Used to love going squirrel hunting with "Pa".
Now, he took eating it to a different level that I never did. He'd boil the skull and crack it open like an egg and eat the brains.
I guess being born in the 1800s and going through the depression and a couple wars made him appreciate any meal.
 
We have gray tree squirrels here. Not ate one since the sixties. I think there are five that frequent the back yard, get critter food that I throw out. Fun to watch them fight over peanuts. I think the season is late Oct. or Nov.
 
We've got two kinds of squirrels in S. Mississippi, Fox Squirrels and gray squirrels. The fox squirrels are about twice the size of the grays but the grays outnumber them by a lot. My recipe is dress and quarter them, chicken fry, make a large pan of mushroom gravy, and cook them in a crock pot or pressure cooker. Serve with white rice, and the gravy of course, and your favorite veggie, and corn bread or biscuits. I've also made some pretty good squirrel gumbo. Sometimes I cook wild rabbit the same way in the same pan with the squirrels, depending on what I came home with.
 
Years ago Dad shot a squirrel while we were duck hunting.

Brought it home and put it in a pot to boil on the stove in the basement.

About 20 minutes on, the most noisome odor began wafting up from the basement.

By the time we got the pot off the stove, the basement and main floor smelled terrible.

We put the pot and squirrel outside to cool.

One it was cool, we offered it to the dogs. Dogs wouldn't touch it!

I take my cue about eating squirrel from the dogs.

i feed the birds. if you feed the birds you will feed the squirrels almost without fail.

when i go out the front door if they don't run for their lives it's time to kill a few.

been eating as far back as i can remember. Grandma used to say "don't shoot em in the head, shoot em through the ribs. the head is the best part. tried the heads but prefer legs and backs.

gotta go raid the fridge. all this squirrel talk has made me hungry

Kenny, we might be kin, all this squirrel, rabbit, homemade biscuits and gravy talk has flung a craving on me. Kinda like home fried potatoes, I can hardly stop eating them until the bowl is empty. Whoever started this thread is guilty of torture, because I haven't had breakfast yet.

years ago,used to lung shoot them, (fox squirrels) to fry the heads, but a huntin buddy told me the ole boys in Kentucky got nuttier than a squirrel **** from doing that so we quit!:eek::D
