I know all the you south Texas and other border guys know about Mexican pickled vegetables, but the rest of you guys might need an update.
The pickle vegetables are served all over the place down in Mexico especially by the street vendors.
When I was stationed in Las Vegas years ago, several times a year we would make a run down to Southern California. And over into Mexico.
My wife will be anxious to shop and I would be stopping looking at the tacos that the street vendors had. She would yell get a taco I want to go shopping.
I would get a taco and it came with Pickled vegetables.
There are any number of recipes on how to make them, and it's hard to do it wrong.
I prefer to always use fresh jalapenos, otherwise just let it rip.
