Sandwich Experimenting

I like to experiment making different sandwiches. Yesterday, I bought some onion flavored ciabatta rolls. And I came up with:

Slice the rectangular roll the long way, and pull out the dough in the center. I just like the crusts for making a sandwich. Next on the bottom part of bread, a layer of Mancini longshots ( fried hot peppers ), then a couple pieces of aged sharp provolone. Then some rare roast beef, and top that with sauteed spinach ( garlic and oil), then some grated Romano. Then on the top piece of bread, a bit of light Greek dressing.

Man was that good!
Got to try this ... sounds so good :)

Another favorite is fried Lebanon sweet bologna with ketchup on fancy dark toast

I probably eat a sandwich about five days a week. My go-to is honey wheat loaf bread with a thin layer of Duke’s mayo and a thin layer of Dijon mustard topping that on both sides. Then a generous portion of sliced roasted turkey, a single layer of pepperoni, topped with provolone cheese. Sometimes I replace the turkey with ham.

About once a week I will have a grilled cheese sandwich. I also like an egg and cheese sandwich on toast. The egg is whipped before cooking (I prefer this over a fried egg) as if you were going to scramble it with a few dashes of hot sauce. Lightly toast two slices of white bread as you are cooking the egg. Pour the egg in the pan cooking one side then flip it. By the time the egg is cooked, the toast is cooled enough to put Duke’s mayo on each side. Fold the egg into quarters and place in on the toast with a slice of American cheese.

My oldest daughter is very fond of grilled cheese and jalapeño sandwiches. She fries the pepper slices in butter, then puts them in the sandwich, which spreads that heat to the outside once fried up. They're very good and stupid simple to make.

My dad would take leftover spaghetti, form it into patties and fry them in bacon grease and shove them between bread slices.

Best breakfast ever.
Never tried it fried. Sounds delicious. I just spooned a bunch either between 2 pieces of bread, whatever you had was fine with me, but the best was on a sandwich roll. Hard to eat and look cool, but they were good. Haven't had one in years. Have to change that.

Back when I was a kid and working hard every day to pay the bills, I often didn't have energy to cook something before going to sleep. I worked night shift and lots of overtime, so I would get off work and go to the store. I'd get a big bag of frozen boneless, skinless chicken breasts, Take them home and throw them on the grill. Takes a little longer, but it works. Slather them in some Sweet Baby Ray's and they come out pretty good. I now had sandwich makings for days. Slice 'em up, a little toasted sourdough, crisp lettuce, sweet onions and some salsa that my neighbors made and sold in gift shops. Good stuff. Wasn't exactly a club sandwich, but then again, I'm not a member. ;)
