I've been wanting some beans and cornbread for a couple of days. Last night I soaked some navy beans. Today, around 1 PM, I rinsed the beans and put 'em in the pot with some thin country ham slices. I let them cook for 3 hours.

I only had one cup of Martha White's Hot Rize cornmeal so I made some fried cornbread. Heated up some Margaret Holmes mixed greens. These greens come seasoned.

My wife agreed that it was some good eatin'. :)

Been eating alot more beans since getting an insta pot, which makes cooking them real easy/quick. Mostly refried beans without fat/salt, but with onions/peppers/various spices. Goes real good with little melted cheese and corn dogers mixed in. And healthy. Almost forgot, last batch had cauliflower and broccoli mixed in, and could barely notice after they got smashed up with the beans.

Used to date a girl many years ago that made beans with molasses and bacon, had to soak the beans overnight .Man that was some good eats , served with toasted homemade bread
Was sort of like what comes out of a can of pork n beans , but exponentially better in all respects
Dont know what kind of beans they were. At that age, i only cared about the girl and eating supper

I usually just boil the beans for about 1 1/2hrs. I like to pulverize about a cup of beans in a processor to give a creamy texture to the soup. I do the same for roasted chilies and leave the seeds in.

I'm not overly picky about what else goes in the mix...ham...onion...peas and sometimes leftover bacon.

Is there really such a thing as "leftover" bacon?
 
Sounds good. FWIW, my dinner tonight was rice and beans, a favorite and a staple of mine. Brown rice, pinto beans, and corn, with some chipotle seasoning, topped with guacamole and salsa. I normally add some cheese and sour cream, too, but I was out of them and didn't feel like going to the store. Sometimes I use black beans, sometimes I use both black and pinto beans.

I made some venison sausage, grilled zucchini and wild rice for dinner.

Good stuff.

I can't take a chance on beans tonight, have a long car trip tomorrow with the spouse...

Hahaha no beans .
But wild meat is good ... Just crack the window a bit
